How about Haven?
Haven is pretty neat in that it can be sound or motion activated.
I’ve used it in the past and it is definitely simple and comes from the guardian project (they used to be the tor repo folk)
However, it hasn’t seen an update in 4 years, so, it may have some issues(?) with newer os.

I already tried, doesnt work.
If something moves in the fov of the camera, the app seems to indicate that its recording, but then it kinda just freeze… idk what its doing, but I never found any video files anywhere… 🤷♂️
I’ve recently started using IP Webcam to turn an old handset into a camera. It’s not open source, but it doesn’t seem to be too annoying, and so far it seems to work surprisingly smoothly and has been up & stable for a couple of weeks.
Good question. I’ve also been looking for some good open-source solution to live stream the camera. Using some proper standard ao I can easily use it. Seems most webcam live streaming apps either include proprietary parts, or are unmaintained for several years now. I usually look at what’s available in the F-Droid store. But seems we’re out of luck. There is “Remote Video Camera” which can transfer video between two phones. But that’s pretty much it. If you want to integrate it into other software, search on Github or Google and maybe include in the search query, the protocol or software you want to connect it to.
