The doors still stay locked when you stop. At least for mine the doors don’t unlock again until you put it park. They just lock when you start moving because the vehicle moving is a good indication that you don’t need the doors unlocked anymore.

Cars lock the doors when going above a certain speed for the first time and the airbag control module always sends a crash signal across the various can buses during an airbag deployment event that is used by various other control units for example to unlock the doors or kill the gas pump.
