Tater-tot casserole is a favorite “comfort food” in our house.
(preheat your oven to 375F) Use any meat you wish, but pre-brown it in a frying pan (lightly salt/pepper). I usually dice the meat into 3-4" cubes. It isn’t necessary to cook all the way through, but to sear and partially cook the meat. Once done, place in the bottom of a 13x9" pan. Mix 3-4 cans of creamy soup (we use mushroom) with one packet of Onion soup mix. Pour the creamy mix over the meat. It should fill all the gaps between. Pour a healthy amount of tots over the top and press down slightly so they are embedding into the soup/meat mix. Bake for about an hour.
We also add broccoli (into the soup/meat mix) if we have it or whatever suits you. Bacon. Whatever. You can also add cheese on top if you wish. Make it your own dish! I’d love to hear variations of this.
